Thanks to a great suggestion from Collin, here is what I ate (and will be eating) today.
Breakfast
- No-Salt/No-Sugar Bacon (2 slices, thin cut)
- 2 free-range eggs, sunny-side up
Lunch
- Left-over Mexican Casserole (small serving)
- 1 free-range egg, sunny-side up (placed on top of the casserole; yum!!!)
Dinner
- Pecan smoked never-frozen pork baby back ribs (four ribs)
- Smoked half of sweet potato (in smoker for 3 1/2 hours)
Yesterday’s meals were:
Breakfast
- No-Salt/No-Sugar Bacon (2 slices, thin cut)

- Left-over Mexican Casserole (small serving)
Dinner
- Stuffed Portabella mushroom cap (stuffed with pork and vegetables)
- Sweet potato hash (sweet potato cut into small cubes, glazed with coconut oil and rosemary, baked in the oven for 2 hours)
I’ll continue to update what my daily meals are. As you can see, it’s not a large amount of food, but it’s all tasty and delicious. I’m not suffering on a salad and chicken breast diet. to the contrary, I’m enjoying some seriously delicious and healthy foods that keep me satisfied and my hunger sated.
